Winodws Server 2003 enterprise edition

hi there,
my company planning deploy windows server 2003 enterprise edition.
before using standard edition.
we in terminal server environment clients access applications installed on server side.
my question is, can able use same softwares in enterprise edition used in standard edition? such microsoft office 2007 volume license used in win server 2003 standard edition.
